Chicken of the Woods is a polypore mushroom. A type of bracket with pores instead of gills. For the kitchen however, that means; meaty texture, bold flavour and loads of absorption.
It is recommended to trial a small amount first, as some people’s stomachs don’t agree with this mushroom. Though for most they are a delicious ingredient, sure to get any forager excited.
Once rehydrated they are a very versatile mushroom, may be sauteed, used in soups or casseroles or decadently deep-fried with herbs and spices à la Colonel.

All mushrooms must be washed and cooked prior to consumption.
