Candy Caps, Lactarius rubidus, are an amazingly aromatic mushroom. They have a concentrated maple syrup flavour and just a couple of dried mushrooms left on a bench can leave an entire room smelling of sweet syrup.
Use sparingly as a crushed seasoning for drinks, meals and even desserts. They can be prepared with omelettes, waffles, ice-cream, cakes, Crème brûlée, pies, tea or cocoa, coffee, curries or relish. The possibilities are endless. A versatile ingredient that any curious chef should surely play with.
